Stock 101





There are a couple of domestic things that I consider to be the ultimate in Martha Stewart-ness.
- making homemade crust (check)
- making homemade organic baby food (check)
- making homemade chicken stock (check!)
Yes, last week I made homemade chicken stock. It was fast, easy and free. (Not necessarily, but close enough.) For the past couple of weeks I froze almost bad carrots, onions, and celery and frozethe carcass of a rotisserie chicken. I added all of these ingredients, plus salt and pepper and boiled away. The stock only cook a couple of hours to reduce down and after straining out of the stuff, I was left with 3 good sized jars of free chicken stock.
Not sure what I am going to make with it, but I like to admire my work every time I open the freezer.

I am so impressed!! I kept saying I was going to do turkey stock at Thanksgiving, but sadly, the moment passed! I am inspired!

isn't there something so wholesome feeling about making stock? my problem is that the only vegetable scraps we accumulate are onions, and I think pure onion stock would be a little to overpowering.
roasted butternut squash soup is easy to make and requires stock. it also freezes well. we had it for dinner tonight.

Homemade stock is the best! We always make stock from our Thanksgiving Turkey--it's tdf!

Ahh, yes! Homemade stock makes *such* a difference with food. And so incredibly easy and thrify to boot.

Look at you go! I love making homemade crusts and will (one day!) make homemade baby food. I need to try my hand at making stock. I love how you used the old chicken carcasses. Good thinking!
