What's Cookin...


Last night I made tuna cakes (just like crab cakes, but with tuna) and they were delish! I have a killer allergy to shellfish, so this is a great alternative. Plus, the recipe healthy... it is from Cooking Light.

Ingredients (serves 4)
3 cans (6 ounces each) tuna in water, drained and flaked
1 large egg, lightly beaten
1/2 cup fresh cilantro, coarsely chopped
1/3 cup plain dry breadcrumbs (I am going to make this 1/2 cup next time)
2 tablespoons light mayonnaise
1 tablespoon fresh lemon juice
1 jalapeno chile (ribs and seeds removed), finely chopped
1 tablespoon olive oil
1/2 cup prepared salsa

Directions
1. In a large bowl, stir together tuna, egg, cilantro, breadcrumbs, mayonnaise, lemon juice, and jalapeno. Mix gently until ingredients just hold together.
2. Using a packed 1/3-cup measure of tuna mixture per patty, shape into 8 cakes.
3. In a large nonstick skillet, heat oil over medium. Working in batches if necessary, cook cakes until golden brown and crisp on the outside, about 2 minutes per side. Serve hot, accompanied by salsa.

Fore!

May and June are busy months in our household.... Mr's birthday, Mother's Day, my birthday, and Father's Day.... all of those events that can make for some creative gift giving. Although he never has to get too creative, anything from here or here is always good with me.

This year we are going to break from the jewelery and give each other golf lessons! We are going to take lessons together...hopefully we will not kill each other. One of us is a tad bit competitive.

I am going to try to channel Catherine Zeta Jones when playing. I hear she is a pretty good golfer and she always looks great while playing....

Things I Like....

9 weeks into this parenting thing, I have found some products that I really like...for Miss A and for me.

Pampers Swaddlers - These are wonderful... not only do they have a yellow stripe that turns green when the diaper is wet, but it is the only brand (of the ones we have tried) that prevents blowouts. Plus, they are helping vaccinate kids around the world.



Dr.Smith's Diaper Ointment and Boudreaux's Butt Paste - I had to take an antibiotic a couple weeks after she was born and as a result, she developed severe diaper rash. Dr. Smith's has the largest percentage of zinc oxide and did a wonderful job of clearing up her bum. Most places keep this behind the pharmacy counter... not sure why. I also use Boudreaux's and love it. All the other brands that we tried out were too drying.


My Brest Friend - I initially used a Boppy, but my lactation consultant recommended this and I love it! You can adjust the straps to make it tighter (as you get smaller) and it makes for a great spot for the baby to take a nap, if they fall asleep while feeding.
SaraBear Diaper Caddy - Our room is downstairs and her nursery is upstairs, therefore we rarely change her in her nursery. Most of the time, I put a plastic pad down and change her on our bed. This cute basket keeps all of the necessary changing stuff organized. Plus, you can get it monogrammed.

My daily uniform


Glamourmom Tanks - These tanks allow you to nurse while keeping your jelly belly covered up and slightly compressed. They are sleek and long and can be worn under anything.



Gillian & O'Malley Pants - Clemsongirl raves about these, so I had to try them out. They are super soft and comfy, plus they are black.... which means they are slimming. :)


Reef Sandals - My feet swelled up to the size of clown feet and flip flops were the only thing that was comfy. I still wear them everyday.



Cardigans - Short sleeve. Long sleeve. 3/4 sleeve. They make nursing a breeze, plus they can be dressed up or down.

Wrap Dresses - When I need to spruce up my daily uniform, I resort to a wrap dress. They conceal many, many flaws.
and last but not least, Spanx. Heaven. Wonderful. Fabulous. Too bad they do not make swim suits.....

Bling Bling


Yes, we know you are a celebrity.

Yes, we know you have a lot of money.

Yes, we know that your mom and you do not get along.


But, this is insane. A new ring every year??? Just think of all the things you could be doing with that money. Don't get me wrong -- I LOVE jewelery, but I think this tradition is a little excessive. Plus, I don't even like this year's ring.

Bring on the butter....

This summer we are going to spend a week on Tybee Island, GA and as much as I am looking forward to the beach, I can hardly wait for one dinner (or lunch) in particular.....
